Congratulations to all FRCS Elementary students who entered the 2021 Christmas Cookie Bake-Off! The judges enjoyed tasting all of the amazing cookies — you did a fantastic job! One cookie, however, stood out above the rest, so we extend special congratulations to Mia in first grade! Her “Cookies and Cream Cookies” from the Kitchen of Mommy were the standout favorite of the judges.
So that everyone has the opportunity to enjoy Mia’s amazing cookies, the recipe is included below. Thanks again to our judges (listed after the recipe) and all the students who entered!
Cookies and Cream Cookies
From the Kitchen of Mia’s Mommy
Prep Time: 10 minutes
Total Time: 17-21 minutes
Yield: 18 cookies
Oven Temp: 365°F
Ingredients:
- 1 stick unsalted butter (cold)
- 1 cup dark brown sugar
- 1 large egg plus 1 yolk
- 2 teaspoons vanilla
- 1-1/4 cup all-purpose flour + 3/4 cup cake flour
- 1 teaspoon corn starch
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cake batter extract
- 12 chopped Oreo® cookies
- 1 cup white chocolate chips
- mini marshmallows
Directions:
- Mix cold butter and sugar util creamy.
- Add egg, egg yolk, cake batter extract, and vanilla.
- Scrape bowl and mix well.
- Sift dry ingredients and slowly add to the wet.
- Once combined, add all but 1/4 cup Oreo cookies ad white chocolate chips.
- Portion out to 18 cookie dough balls.
- Stuff each ball with a portion of the reserved Oreo cookie pieces and 3 mini marshmallows.
- Bake at 365°F on parchment paper for 7-10 minutes, until the edges are golden and the marshmallows are toasted.
- Let cool on the baking tray.
